Ingredients:

2.5 Kg. lean pork butts
1 Tbsp. ground white pepper
100 grs. non-fat dry milk
1 tsp. ground celery seeds
100 grs. salt
1 tsp. mace
100 grs. soy protein concentrate
30 grs. powdered dextrose
1 tsp. onion powder
250 ml. ice water
1 tsp. parsley
Directions:
Grind meat through a 0.65 cm or 0.95 cm grinder plate. Add all the ingredients except
the water and mix thoroughly until evenly distributed. Place the meat in the food processor, adding the water as you go along. This will help emulsify the meat.
Stuff into a 32-35 mm hog casing and make into 12cm to 15cm links. Place into 71.1 °C water and cook until an internal temperature of 65.5°C is attained.
Serve with a Brezen, sweet spicy mustard and a cold tall glas of Weißbier
